Südzucker’s Unique Fondant, Icing and Glazing Portfolio

Our fondants, icings and glazings are available in paste, block and powdered form and are manufactured to provide highly specialized product performance. Our micro-fine sugar crystals simply melt in the mouth and provide great mouthfeel. In the following you can explore our different types of fondants, icings and glazings.

Our classic fondant is mainly used to produce a range of fondants for fondant dipping, fudges, butter creams and confectionery fondant fillings.

Basic Product Information

Our classic fondant has a very versatile usage and it is available in high and low glucose varieties to cover your individual needs. Just add some water and heat it to 40-45°C. Our classic fondant is also available in organic quality (EU-Eco regulation). EU Organic

The product has to be stored dry and preferably at a temperature between 15 and 25°C. Under these conditions and stored in the unopened, original packaging, the product can be kept for minimum 12 months after production date.

Practical Tip

To reduce wear on your machinery, pre-slice the fondant into blocks of 500gr or appropriate sizes for your needs before mixing.

Powdered Fondant

Our powdered fondant is a very fine, milled icing sugar which also contains spray dried glucose. It is mainly used in bakery applications, for example to decorate fresh pastry, cakes or doughnuts or for filling chocolate candies and as seeding agent in confectionery products like caramel fudge or fruit chews.

Basic Product Information

The powdered fondant requires less manual handling because there is no need to cut off the desired amount of fondant from a block. You can easily pour out as much as you need, blend with 11-13% water and heat it to 35-45° C. A further advantage is the extra fine particle size which is less than 20 microns (μm).

The product has to be stored dry and preferably at a temperature between 15 and 25° C. Under these conditions and stored in the unopened, original packaging, the product can be kept for 24 months after production date.

Practical Tip

Reduce or increase the amount of added water to produce firmer, denser covering or lighter, more transparent glazes. But always be careful not to exceed the maximum temperature of 50° C under any circumstances.

Ready To Use Fondant

Ready-To-Use Fondant (RTU Fondant)

Our Ready-To-Use (RTU) Fondant is mainly used for fresh pastry, soft fillings and chocolate candy.

Basic Product Information

As the name already suggests, this fondant can be used immediately without any mixing process. Ready to use fondants can be applied manually with a spatula or brush, or applied by machine. It does not require additional water, you simply need to heat it to 38-45° C.

Glazing

Glazing

Our glazing is mainly used for doughnuts, Danish- and other pastries to give them a transparent glaze that creates a beautiful shiny appearance on the pastry.

Basic Product Information

The glazing is transparent, brilliant and tender. It is easy to use without adding any other ingredients. Simply temper between 38°C-42°C and it is “ready to use” for industrial applications, like spraying and glazing machines and craft applications.

Close Wrap Icing

Close Wrap Icing (CW Icing)

Our market leading Close Wrap (CW) icing is mainly used for coating fermented goods and cakes. It gives an excellent non-stick finish and is therefore very easy to handle in packaging.

Basic Product Information

Our close wrap icing have a soft texture and give an excellent quick-setting finish. Its non-adhesive character prevents sticking to its packaging. Close wrap icing does not require additional water, you simply need to heat it to 45-50° C.

Basic Product Information

Fudge icing is suitable to enrobe, mellow, comb, fill or top. The fudge range is fast setting, freeze- and chill-stable. It is a great product to form light cremes and spreads.

There are several flavours and fudge/icing variants available. Among others: chocolate, lemon,  orange, caramel.

Our roll out icing is mainly used for celebration cakes.

Basic Product Information

It is a white or ivory sugar decoration mass for coating cakes, modelling figures and sculptural decorations. The smooth texture is ready and easy to use at room temperature and also mechanical sheet compatible. You simply need to roll it out with a rolling pin, cut, shape and model it.

Keep the product stored airtight: Wrapped tightly in plastic wrap or store in zip bag in sealed container to prevent product drying out.
