Candy Sugars
Technically, candy sugars are speciality sugars made from beet sugar, that undergo a caramelization process which results in their distinctive, flavoursome sensory profile and characteristic colour.
We offer a range of high-quality candy sugars with the classic aromatic caramel flavour. Each product is carefully produced in a specific candy sugar production process at a dedicated facility:
- Candy sugar (rock sugar)
- Candy powders (candy cassonade)
- Candy syrups
Due to their unique properties, candy sugars are used for a wide range of applications including beers, confectionery as well as biscuit and cakes.

Production
We produce all of our candy sugar specialty products using our own unique production processes and parameters:
- We make our candy sugars by slowly crystallizing highly concentrated hot sugar syrup which we then cool down slowly in bacs or drums. We separate the crystals that form from the remaining syrup by centrifugation and then sort them into different fraction sizes. Candy crystals are available in brown and white colours.
- Our candy powder comes from the fast crystallisation of the remaining candy syrup and is available in lighter or darker brown grades.
- Candy syrup is a result of the candy production process and is available in lighter, softer in taste, or darker, stronger tasting versions.
Various Uses for Südzucker’s Candy Sugar
Our candy sugar is the top choice in a wide range of applications that require caramel flavours and that characteristic brown colour:
- Candy sugar and candy powder are perfect for beverage applications, but also for confectionery, (seasonal) baked goods and salted foodstuffs.
- Candy Syrups are great for beer brewing because of their aromatic flavour profile, and particularly well suited for craft beers and stronger beer types. Its characteristic taste and flavour makes our candy syrups a favourite for biscuits, confectionery, baked good like aromatic cakes such as gingerbread and Lebkuchen.
Products with A Long History.
Though candy sugars are very popular today due to their unique, flavoursome taste profile, their history dates way back to Belgium in 1508, when the first candy sugars were produced. At that time, candy sugar production was an expert profession which required a high level of skills and craftsmanship. The original raw material was cane sugar, which is why its processing sites were close to the Belgian ports. In medieval times sugar was a scarce luxury, and candy sugar a gift fit for royalty.
Later on, new sugar refining and processing methods were developed, and the supply of raw materials was less dependent on the proximity to the sea. Nevertheless, the sugar industry in Belgium, especially in Antwerp, flourished. At the end of the 19th century, there were some forty sugar refiners in Antwerp refining raw cane or raw beet sugar. The industry underwent consolidation.
At the beginning of the 20th century, candy sugar producers and cane refiners founded syndicates to protect their mutual commercial interests. In 1935 the Candico cooperative association was established, which was later taken over by Sucres de Tirlemont. Today, Candico is the only remaining candy sugar production in Belgium and belongs to Raffinerie Tirlementoise, which is a 100% Südzucker subsidiary.
